Great Raft Brewing to Host First-Ever Beer Dinner on Oct. 11

Because hosting their annual Great Raft Ramble – a day-long blowout featuring dozens of limited-edition brews created especially for the Ramble – on Saturday, Oct. 12 wasn’t enough, the team at Shreveport’s Great Raft Brewing (1251 Dalzell St.) will be hosting their first-ever Estate Beer Dinner on Friday, Oct. 11. From the guest chefs to the ticket price, it’s one of the more accessible and exciting food events on the horizon.

The dinner will feature five courses of food and six beers for $75 per person. Guests must be 21 or older. Tickets can be purchased here. Food will be prepared by chefs Jason Brady and Jacob Mouser, while Great Raft owners Lindsay and Andrew Nations have selected hard-to-find brews from the GRB portfolio. Unlike most pairing dinners, which begin with a food menu and select libations to match each course, the process of designing this menu began with picking the featured beers and working backwards from there.

If you’re a beer person, you likely know by now that Great Raft has a knack for barrel-aging and bottle-conditioning their limited release beers. Lindsay Nations said that rare beer aficionados will not be disappointed by this dinner.

“We will definitely be going into the cellar for some of these beers,” Nations said. “There will be some really limited things that have aged perfectly.”

“There’s not one thing on this menu that I’ve ever cooked before.”

-Chef Jason Brady

As far as the menu goes, chefs Jason Brady and Jacob Mouser are being pretty tight-lipped about it, but it sounds like an interesting collaboration between two of Shreveport-Bossier’s most independent culinary minds. Mouser, who won Prize Fest‘s Battle of the Golden Fork in 2018, is a young, wildly creative chef known for foraging obscure and fascinating ingredients (Look for something called “campfire-extracted forest salt,” which isn’t salt but rather the ashes of a medicinal plant called coltsfoot, to make an appearance on the menu.) Brady is an outdoorsman and chef who possesses a rare expertise in game preparation and has recently been nerding out over traditional Japanese cooking techniques. The two should make for a fascinating culinary team.
