It’s not that I’m a pizza snob. I just have a difficult time finding a crust that I love. I loved the crust at the now-closed Pietro’s, and I love the crust at the newly opened Wooden Spoon Pizza. Wooden Spoon Pizza is located inside of Flying Heart Brewing at 700 Barksdale Boulevard in Bossier City. The pizzeria is operated by Jeffrey Judge and his awesome family, who also operate The Wooden Spoon, a tiny but outstanding sandwich shop and bakery in Bossier City. “I make all of my own dough and let it ferment for a couple of days before it’s served, which is like letting the yeast do the work, so I don’t have to,” Jeffrey Judge told me. He also makes his own, four-ingredient sauce from scratch. Pies are baked in a brick-lined gas oven at 700 degrees and cost $9-$11 each.
What does Judge recommend that first-timers try at Wooden Spoon Pizza?
“You cannot go wrong with the Margherita pizza,” Judge said. “That’s how you judge any pizza joint, in my opinion, by their Margherita pizza.” The entire menu can be viewed on Facebook.
You also cannot go wrong with one of their t-shirts, which Judge and I agreed are “pretty metal.” His daughter, Bre, created the tattoo-worthy illustration of the Grim Reaper serving a pizza. The first batch of shirts that Judge had printed sold out at $20 a pop a week before the pizzeria had even opened, which is probably a good sign.
Wooden Spoon Pizza is open Thursdays through Sundays. On Thursdays, hours of operation are 3-10 p.m. and on Fridays through Sundays, hours of operation are 11 a.m.-10 p.m. All ages are welcome. There’s no exterior signage at the moment; just enter Flying Heart Brewing and follow your nose.
