I love stopping in at Bergeron’s Boudin and Cajun Meats of Shreveport, located at 7805 E. Kings Highway, because you never know what clever promotion or unusual product they’re going to come up with next. Recently, I wandered in as the owners were explaining to a customer that, in preparation for the Aug. 31 match-up between the LSU Tigers and the TCU Horned Frogs, Bergeron’s would be selling smoked and deep-fried frog legs by the pound. I asked co-owner David Andre how that promotion went.
“We sold about 120 pounds of frog legs,” Andre said with a grin, a giant painting of the LSU mascot, Mike the Tiger, hanging over his shoulder.
Their latest menu additions, while not apparently designed to insult any college athletics rivals, are fun and delicious. Boudin and sweet potato-stuffed spring rolls (please note: they’re referred to on the menu as “wraps,” but they’re fried spring rolls) are a fun mash-up of Cajun-style boudin sausage and Chinese take-out. At $1.50 apiece, the boudin-stuffed spring rolls are tasty and fun to munch on.

Another new menu item, wild wings, are pork shanks that have been chopped down to the size and appearance of chicken wings. A trendy method of serving pork that’s been spreading across the country in recent years (see a New York Times article about “pig wings” here), the Bergeron’s version of pork “wings” are tender, smoky and served with Frog Bone Cajun Dipping Sauces – sweet and spicy dipping sauces that are made in nearby Tyler, Tx. Wild wings are served three for $3.99, with a choice of two dipping sauces, or $1.99 apiece with one sauce.
